How often are we suppose to recieve Google AdSense paychecks? I've been doing AdSense for 3 months now and have probably made a total of around $500-600. No paycheck yet though.

You should get a check every month toward the end of the month for every month that you earn over $100. If you look in the control panel you will be able to check your payment history. It is possible that you have not given them your tax id or ssn info. If that is the case they will not send you checks until you do.

BTW .. You can ask them to hold payment if you wish. I prefer to not receive a cheque every month, to avoid too many bank charges. If you email them towards the end of each month they will roll your balance over for another month.
(Would be better if they let you set a threshold, so you could determine at what point you are paid.)

You have them hold $100+ checks to avoid a ~10c bank charge? I guess you'd rather have Google make money with your money than to make the money on your money yourself.

Charges are a lot more than 10c if you are receiving the cheques in Europe.
