I'm listed in DMOZ directory, and now I'd like to change category of my listing, (I'm currently in "Email Pals" and I want to go to "Pen Pals').

Would you recommend this update of listing? Will I wait long for this modification to happen? In meanwhile will my site be in first category or it won't show in non of categories?

I would leave it where it is, the listing could get messed up or even dropped altogether.

I agree with bhartzer. Never modify your dmoz listing unless you REALLY have to. I am a DMOZ editor and i know that can mess things up. Obviously, if there is something major wrong with your listing, than it may be worth taking that risk however.
