I was wondering if one was to exchange links with a site but link to them from another site of theirs... so let's say I own site A and site B and I ask Site C to link to A and I will link to him from B...

would that be considered a one way link that would not be caught by google?

If you have to use the word "trick" in the title of the post and "caught" in the body, you're probably not heading down the right path and the end result you are striving could well end up in tears.

The whole link thing is overplayed. Produce a quality site with quality content and the links will come just fine.

I would however submit the site to some quality directories. DMOZ for example.
