I want to submit my site in different directories. I want my site to show up mostly on Canadian search engines. Shall I go all the way to the regional (deep deep level pages) and submit my there in most directories ?

I'd go for a balance - go for the 'Canada' pages in some directories, but go for the 'topical' pages in others.
Unless your site is about nothing but Canada!
Don't worry too much about the 'depth' of the category; it's the relevance that matters (with Quality directories).

submit your directory in relevent category. relevency is important wethere it is from canada or not.

You can post your website to canadian search engines and post to the directories in the relevant category that suits your's
There may be possibility of getting spanned if the category u had given is wrong.

Just submit your site to directories in relevent category. I think it is most important. It is not necessary to only submit to the regional unless your site is just about Canada

It is a regional posting,so it is better select the Country and Religion category in directory and post in the Canadian region.I think that Dmoz will be guide you better,you can find the category to sub category wise ideas.
