I have a supplement site where I use to have a page for each flavor of a product. But I now created one page with a drop down with all the flavors for the user to choose. I created 301 Redirects from the different flavor pages to the new page with the flavor drop down. Will multiple pages with 301 Redirects to a single page cause any issues with Google.

No issues, that should be fine - as long as you verify the status as 301 and NOT 302.
