How does Google Ad-sense affect your rating?
It puts links on your page, and I know they probably aren't quality but it is a google product?
Also how do links that are posted in forums affect your ranking?

Adsense has zero affect on your rankings - bottom line.
Forum links are somewhat useful, but mainly discounted as it's too easy for YOU to simply be posting them, as opposed to other users actually posting about a useful resource they found (which Google wants).
Overall, if you post in forums, and they allow it, one simply link in your signature is the most I'd shoot for. It'll be repatative, but may be useful for driving traffic, which is the best use for forum links, IMO.
