Couple Questions on Affiliate Programs (In: Members Lounge)

I decided a few weeks ago to take some time to learn some SEO to try to get some better results with google. I have been reading here and making changes and I have started to see some results but not the results I expected.
A few weeks ago the only thing google had for site:domain.com or site:www.domain.com was my index page. I fixed my meta, got rid of my flash navigation menu, fixed my page titles and added more content to my site. Did the google sitemap and started watching my logs for visits from the google spider. They use to spider the same page every 2 days or so. Now they have spidered everything in my sitemap every 2 days or so for about 2 weeks.
The other day a few of the different data centers and now all of them starting showing 9 results for site:www.domain.com and site:domain.com and both results were exactly the same but they are old versions of my site and marked as Supplemental, all except my index page. For months before adding the sitemap they had nothing but my index page but now they have cached old versions and the old meta and titles for those results.
I don't think my hosting (shared 1and1 hosting anyone know?) can help me with the 301 redirects needed to fix the duplicate content issues I think I am now seeing the results of so my solution will most likley be to change hosting and I can't do that right now.
My real question is how did I go from my index page only to an improvment of most of my pages being listed but as supplemental results, the new supplemental results are of old content they never showed in the index before adding a sitemap, and will the 301 redirects fix this issue?
I am primarly looking for local results with my site and not looking for world wide rankings and I can only work on the site in my spare time as I am trying to build the business behind the site up as my primary role.
Any sugestions are greatly appreciated and I thank eveyone that has posted so much helpful information on these boards so that I have been able to learn as much as I have.

You can have a 301 redirect with 1&1 if you pay a bit more for your monthly package, and are using Apache.
Having spoken with 1&1 technical support just a few weeks ago, I can assure you that they are totally clueless.

Another problem with 1and1 hosting is that your site is hosted in Germany and will not show up for UK search results (unless you have a .uk TLD).

Footnote.
We used 1 and 1 and were hosted in Germay, we got good Google.com listings but Google.co.uk would not list a single page even in a site search, prior to that we had used Namesco for hosting and that was at telehouse, this means that Google removed us from the .co.uk index and we had been in it for 4 years.
We have a .net domain and now use UK Fast and are again listed in Google.co.uk.
