For our site (see profile) we are displaying the domain name on many pages like mydomain.co.uk because this is what the site is called. Should we be displaying the domain with the www or does this not matter ?

It really doesn't matter too much. I would look through your web stats and see what people search for to see if there's a preferred way that they search for your domain.
It's also a branding issue, as well--what do you want people to call your site? Most likely it will be without the www.
Also, you might want to set up a 301 Permanent redirect from www.yourdomain.com to domain.com since you're trying to brand your site with domain.com rather than www.domain.com

I've already set-up a redirect from non-www to www. In the past I've experienced duplicate content issues when this wasn't set-up by search engines picking up both www and non-www.
I was only wondering if putting our site name with the www would cause any problems for search engine rankings.

No, I don't think adding www in the title tag will cause any issues. The only thing it will do is change the keyword density of your title tag, so that might potentially reflect some rankings you have for certain keywords.

There is no issue with the title tag saying domain.com and then having the site at www.domain.com with a 301 redirect from domain.com to www.domain.com - people often expect there to be a www in the URL of the site, even if the www isn't in the company logo.
