I went into the Google Webmaster tools and there is a WARNING label next to our sitemap. This is the warning message:

When we tested a sample of the URLs from your Sitemap, we found that some URLs were not accessible to Googlebot because they contained too many redirects. Found: 302 (Moved temporarily) [?]
What does this mean? How often are you supposed to create an XML sitemap and submit it to Google? Our SEO company did this but our contract expired in Nov so that was the last submission.
I'm very lost with all this so any advice would be greatly appreciated. Thank you.

It means that the URL you listed does not return "200 OK" status in the HTTP header, and therefore Google will not index that URL.
Use a HTTP Header Checker, such as the Live HTTP Headers extension for Mozilla Seamonkey and Mozilla Firefox to see what is going on with those URLs.
The URL returns a redirect to another URL. That is not good. It is especially bad as it is a "302" redirect. That can cause many problems. It is likely that the server or the site is not set up correctly.

Our site is dynamic so content changes every few days. Could it be that the sitemap wasn't updated for months and courses from that sitemap no longer go to the same URL?

No, your site is configured to send a "302" and that is the problem you need to investigate.
It is most likely that your "404 Error Page Handling" is misconfigured, and that can cause you a massive amount of grief.
Is it an Apache or an IIS server?

My webmaster did just tell me that we are using 302 redirects. I am a marketer and not a webmaster and I don't understand what all of this means. What can we use instead? Is this really bad?

The URL should return a "404" HTTP status, not any redirect code.
