Does anyone know anything about the process of adding a guestbook to a site? Thanks in advance!

If your host allows you access to run cgi scripts, perl, php, etc., you can install your own, but this might take a bit of techno savvy.

For a personal site on a free host or ISP, you generally don't have this option. Some do provide a common guestbook script for you to use, but it's usually very basic and not too configurable.

There are some third-party options like htmlgear and bravenet that are very simple to use, but be prepared for annoying pop-ups/banner ads.
