I think your best bet is to read through some of the help files provided:
help.godaddy.com/article_list.php?topic_id=178&&
OR try:
products.secureserver.net/products/website_tonight/help/
for the "online help system"

To select change template look under the "web design" tab -
Changing Your Web Page Templates

Some templates use a cascading style sheet (css) to dictate the layout of content. You can determine which templates are css-based because the title includes "CSS". Using a css-based template allows you to switch to other css-based templates without having to add the content again. When you switch from one css-based template to another, your content automatically switches with it.

1. From the Build Web Site menu, click Templates.
2. From the Category list, select the category you want to select your template from.

NOTE: The number in parentheses indicates the number of templates in that category. There are a maximum of six templates that display per page.
3. If there are multiple pages of templates, from the Page list, you can advance to other pages to view more templates.
4. Select the template you want to use.

NOTE: Only resellers can use Reseller templates. If you select to use a Reseller template, you must enter your Reseller Prog ID.
5. To make a backup copy of your Web site before you change the template, select Back up Web site before changing template.
6. Click OK.
7. Click OK again to confirm the template change.
The Colors page displays.
8. From the Select a Color Theme area, select the color you want to use.
9. Click OK.

Once you have selected the template you want to work with then continue to follow the other steps within the sections of the help files.
