Can anyone say for sure what type of occasion friendship rings are for? And for that matter, what type of relationship must you have with a person for a friendship ring to be appropriate?
Let's say you have a friend of the opposite gender, and let's say you want to thank them and show them you value their friendship (especially if they are leaving and going away and contact will be much less than before). Is a friendship ring appropriate under these circumstances? What about if they have a significant other (like bf, gf, husband, wife)? Does that matter?

WOW! Talk about off topic...
I thought you were originally talking about webrings of some kind...LOL
Then, after removing my head form the e-sand, I realized I was way off base.
OK, so the best advice this married guy can offer is this:
Give the person something to remember you by - ring, bracelet, locket, some weird wooden carving you made yourself from popsicle sticks - anything.
They'll remember the person, not the object.
...and if folks want to stay in touch today, they'll make it happen. pen and paper still work, as do Internet cafe's for checking e-mail and IM-ing.
If this is 'the love of your life", well, you'll have to figure that out on your own. I suspect we've all grappled with that one at some point and we've all wondered if we were doing the right thing.
At this point in life I can only say this - make your choice and live your life. Don't get wrapped up in what might have been, just focus on putting 100% into what is going to be.
As for actual friendship rings themselves, well, friendships are built on relationships and a shared bond, not on a small piece of jewelery.
