What cart messages do you use when an item is out of stock.
How do you look after the customer, without losing them?

I always put "Item temporarily out of stock, please check back soon". Or if you know when the item will be restocked, you can let them know when it will be in stock again.
It's hard not to lose the customer at that point, specially if they're looking for something specific. You can also suggest another item next to the out of stock one.

Also you can config a "Allow Back Order" module to your shop cart so that will allow customers to order and get informed of the item availability later.

Another possibilty is after the "out of stock" message, add a link to a product that they might want to try instead.
I have used that successfully to save customers.
