Considering your the site is already indexed and ranked. How long does it take for changes you make to your optimization to be picked up and recalculated. Any info would be very much appreciated

This depends on the search engine and includes many factors. If you update your site on a regular basis and have a high PR on Google then Google will most likely update your page in a few days, sometimes quicker. But that's really only on the page-level.
If your SEO efforts include linking campaigns and additional content to your site then it could take up to a few months to see any real changes in rankings.

I would have to agree with bhartzer and how lucky you are to FTP up the changes before Google does its dance.
I have done changes and had the changes go live in Google's rankings next day.... and sometimes do changes and wait 2 months
Seems that you should find out when the Dance happens and try to get your stuff in before the 6-8 weeks after...
As for Getting into other Search Engines (Fast, Inktomi, AskJeeves etc...) its really a matter of letting the spider come to you
