I am moving my site to a dedicated server and I was wondering if there were any pitfalls from an SEO point of view? Is there anything I have to be careful of to not lose any rankings?

Since you are changing the IP addy, but not the URL's (assuming this is the actual case here), you should be fine.
The engines are looking for the URL when they come out of their caves. They'll note the change in IP address, but they follow the URLs.
