Hi, Scott! Welcome to the forums and thanks for jumping in and giving some reviews of your own right off the bat.
Well, you're absolutely right about being the site being a bit minimalist. In fact, it looks rather barren.
A graphic logo would really go a long way toward making it look more artistic, even if that's just your name in some scripty font with a slight drop shadow.
Here's the sum total of indexable text on your home page:
SCOTT WHITTON
PAINTING
Gallery Resume Contact Main
I'd advise putting several paragraphs of keyword-rich text there. Who are you and what do you do? Where are you? What mediums do you use?
The resume is very brief and dry and doesn't really say much. I wouldn't say eliminate it entirely, but an "about" page that discusses your background and accomplishments in a narrative format would be more interesting to read. Throw in some personal info, like "While Scott's first love is painting, he is also a professional architect. He lives with his wife Suzy and their two sons in lower Slobovia, where he can frequently be seen jogging along Some Trail with his dog Jack". (Cue up a pic of you and said dog.)
The contact page is nothing but a yahoo addy. Surely if you have a domain, you can have an addy associated with that domain. Also, I used to think contact forms were lame, but I can tell you that by posting nothing but an addy, it will get "harvested" and you'll find yourself getting a ton of spam in short order.
Should you list prices? Well, do you intend to sell your works or is the site simply a "vanity brochure"? If I can't buy your goods, why would I go to your site? You've got to motivate your visitors to want to do something. Hopefully, to buy your works.
Page titles are important, as search engines place more weight on them. Again, keywords in titles will help. I noticed in the gallery that the tree page was titled "Untitled Document".
Privacy & Legal - Don't see any info on that at all. If nothing else, you need to add copyright info.
Typos - Not sure, but is "Angles And Demons" correct, or should it be "Angels"?
Good luck with it.

Nice paintings! Easy navigation and clear presentation. You could add a link on the Gallery page: "Other paintings" leading to a page with more paintings. The link could be placed for example under the thumbnail-images.
